1. Keep them Cool (Not Frozen)
Store oysters in the refrigerator at 35–40°F (1.5–4.5°C).
Do not freeze them—freezing kills live oysters and affects texture.

2. Store Cup-Side Down
Place them cup-side down (the deeper shell down) to help retain natural juices.
Use a tray or shallow bowl to keep them stable.

3. Cover with a Damp Cloth
Place a damp (not soaking) towel or cloth over the oysters.
This helps keep humidity in and prevents drying out.
Avoid sealing them in an airtight container or plastic bag—they need to breathe.

4. Don’t Store in Fresh Water
Never store oysters submerged in fresh water or melted ice—it will kill them.
If using ice, keep oysters elevated on a rack above the melting water.

5. Use Within a Few Days
Ideally, consume within 1–3 days of purchase.
Live oysters can survive for up to 7 days if handled properly, but flavor and quality decline.
